Eggs Baked in Tomato Shells
Serves two, double (and triple) as you see fit
Ingredients:
2 tomatoes
2 egg
Optional:
a few strips of fresh basil
a few chunks of cheese
crusty bread on the side
salt and pepper to taste
Directions:
1. Preheat the oven to 425.
2. Hollow out the tomatoes, saving or discarding the inside.
3. Crack an egg into each hollowed tomato shell.
4. Cook for 25-30 minutes in a baking dish or ramekin. Test doneness with a fork several times while cooking. I like my eggs set but runny. A few minutes before ready top each with cheese if you are using.
5. Serve with basil. Salt and pepper to taste.(via Made by Frances)
