Recipe of the Week: Chicken and Goat Cheese Salad
Lately I have been making this salad a LOT for dinner.  The goat cheese makes it incredible.  This picture above is not the exact salad I make, but looks rather similar.  Here’s what I use:
Romaine Lettuce
Grilled Chicken Strips or Chunks
Goat Cheese (*this part you cannot change!)
Glazed Pecans and/or Walnuts (in my grocery store, they sell various brands and varieties of these in the produce section, but also look in the salad toppings/salad dressing aisle)
Chopped Tomatoes
Chopped Cucumbers
Chopped Red Onions
Balsamic Vinaigrette of your choice (my fave lately is a Kraft Balsamic Vinaigrette that has Asiago Cheese in it)
There’s no rules on how much or how little you should have of these ingrediants-just a little of each, depending on how hungry you are and what you like.  For example, I love loading up on the goat cheese and glazed nuts :)  Enjoy!
